Chateau Hermitage Saint-Martin, is a historic estate dating back to the 13th Century, when it was founded by the Saint–Victor Monks of the region. In 1999 the estate was purchased by winemaker Guillaume Enzo Fayardontrol, who with an open mind and modern attitude, helped drive the organic and sustainable farming movement in Provence. Viognier isn’t an overly common planting in Provence, in part due to the fact it can’t be used to make Rosé. Only small productions, this wine is medium bodied with aromas of white flowers, beeswax, white peaches and apricots. A slightly oily texture (as typical of Viognier) and medium bodied.
This wine pairs well with spicy dishes, seafood and poultry.
