Domaine les Aurelles was founded in the early 1990’s by Ex-Bordeaux/Cognanc vigneron, Basile st Germain (Latour, Haut Brion, Léopold Gourmel). The winery is located outside the village of Nizas in Caux, Herault; an area of the Languedoc that has been quietly producing some of the most exciting, and valuable wines France can offer. With famous neighbours such as Grange des Peres, Mas Coutelou, Domaine de Trevallon and Mas de Daumas Gassac, Domaine les Aurelles matches quality whilst remaining completely unique. These are wines of a purist, and sit comfortably in a league of their own.
After early experiments with oak, steel and concrete, the wines are now fermented and aged exclusively in enamel lined vats. Their 9 hectare vineyard is uncertified but practicing biodynamic, and often subjected to extreme crop thinning to maximise quality. In some years, this has caused up to 50% crop loss (although surviving fruit is pristine). The Domaine strives for absolute perfection. Low intervention, natural yeast, low sulphur, manual harvest, and an unrelenting pursuit of quality.
