Cantine Paolini has a long history over half a century that began in 1964 in Marsala, the westernmost city of Sicily. In a fertile territory for the cultivation of vines and for cooperation, a group of far-sighted winemakers thought of uniting their individual strengths and skills to enhance the most suitable soils and improve the production of grapes in wine. In 1972 the first harvest took place and since then the path of the winery is constantly expanding. The rural centre once inhabited by winemakers is located in the district of Paolini, from which the winery takes its name. The origins of the name are even more ancient, dating back to the beginning of the 1500s when the monastic order Paolotti started to cultivate the vineyards in the same places today.
What used to be the small group of winemakers is now a family of 1000 members that represent the beating heart of the business and whose grapes come to the Paolini winery.
Fresh and fruity aroma, harmonious on the nose with floral notes of rose and violet. On the palate it has a broad taste with velvety and elegant tannins. Pleasant and medium-long persistence.
Food pairing: particularly suitable to accompany meat dishes, excellent for starters of savoury meats and cold cuts, also excellent with pasta with juicy sauses and medium-aged cheeses.
