Producer: Château Pavie
Named for the Pavia peach, which was famously cultivated on the château lands long before it was a vineyard, Château Pavie has had its Premier Grand Cru Classé status since the 1950s, even being elevated to the top class of this status in 2012. With some of the oldest vines in the appellation (some over a century), low yields, and manual work in the vineyard, Pavie produces top-quality wines that are closed in their youth and do best with at least 7-8 years in the cellar. Aromas and flavours of cherries, blueberries, blackberries, coffee and oak are present in this wine, which is ready to drink now and demonstrate its exceptional length and richness.
Pairing suggestion: classic Entrecôte à la Bordelaise – perfectly cooked rib of beef with the famous red wine and shallot sauce.
